How to dice an onion and not cut off your finger…

So back in July I was able to attend ( through the kindness of a great Sidekick) a knife skills class at a cooking school here in Atlanta. I was thinking of this tonight as I was dicing an onion for the “false Alarm chili” that said Sidekick also introduced me to. Before I could have never diced an onion like that. My onion pieces would have been the size of garlic cloves. Or rather some of them would be.

The class was great and I would highly recomend it to anyone that steps foot in the kitchen. Not only did I learn how not to cut off my finger but I also learned the importance of a good knife. My dicing life will never be the same….

    I haven’t been a very good sidekick for not checking in on your blog. Yeah, my knife skills have gone to shit, except for the way I actually hold the knife. Repeat after me, “I resolve to cook more in 2008!!”
